Charlie's Chicken Caesar Wrap

Chicken Caesar salad wrap all parcelled up and ready for lunch!

Rather than subject himself to a soggy sandwich from a shop or pile on the naughtiness with a pub lunch, Charlie likes nothing more than a tasty chicken Caesar salad wrap for lunch! With home poached chicken, home made dressing and piles of fresh salad, this delicious lunchtime treat is filling as well as healthy.


Recipe:


1 wrap, choose from loads of varieties in the shops, this one is a white light fajita wrap
a handful of seasonal salad leaves
1/4 red onion sliced
5 or 6 piccolo tomatoes
1 chicken breast (you'll only used half in a wrap but save the rest for tomorrow's lunch!)
Home made Caesar dressing (see tomorrow's post for recipe)
1 sliced of cured ham or Parma ham
a few shavings of Parmesan

Fill a large saucepan or wok with hot water and bring to a simmer, season the water with salt and pepper. Place the whole chicken breast into the centre of the water, if the water doesn't cover the chicken make sure you turn it regularly. Leave the chicken to poach for about 10 mins.

Place the Parma ham or cured ham under the grill for about 5 mins until it's nice and crispy., then remove it and leave to drain of excess fat on a sheet of kitchen roll.

Place your wrap on a sheet of greaseproof paper, pile the salad leaves in the centre if the wrap in a line. Leave a gap of about 1 inch at the bottom of the wrap so you can fold it up and secure the fillings in.

Slice the onion into thin rings and pop them out over the salad, cut the tomatoes into quarters and scatter across the salad, slice the crispy ham into shards and scatter over the salad.

Remove the cooked chicken from the poaching water and pat dry with kitchen towel, cut the breast in half as if to butterfly the breast so you end up with two thin breast portions. Then cut the chicken into long strips, place in a bowl and season with olive oil, salt and pepper. By doing this whilst the chicken is still warm it will soak up the seasoning beautifully. Drizzle in 1-2 tsps of the Caesar dressing and mix to ensure the chicken is well coated.

Lay half of the the chicken slices across the salad on the wrap and finish with a few fresh shavings of Parmesan.

Tuck the bottom of the wrap up over the salad filling, then folded over the right side of the wrap then roll onto the left side to make a tight roll that is open at one end. Do the same with the greaseproof paper, as if the wrap is the filling and the paper the wrap, tie with string to keep it sealed together.

Pop in a lunch box and observe lunchtime delight!
